A New Twist on an Old Classic

This week’s recipe is a twist on a Paleo staple and classic snack – the apple. Even I get tired of eating an apple by itself, so it’s no wonder that kids get tired of it. The key to getting them to keep eating the same healthy snacks is to mix it up a bit. Create a variation of that snack so that while your kids are still eating healthy, they’re eating something new. Try out this Apple Crunch and see how they like it!

Ingredients

1/2 Granny Smith apple, cubed (or your kids’ favorite apple)

1 cup jicama, cubed

1/2 Tbs. dried cranberries

2 Tbs. pistachios

1 fresh lime

Directions

Place chopped apple and jicama in a bowl. Cut lime in half and squeeze juice over the fruit. Toss to coat. Fold in pistachios and cranberries.
