Sarah’s Absolute Favorite Paleo Treat: Pumpkin Brownies!

Let me start by saying that these brownies are the fire. They get rave reviews from kids, and as a bonus, they’re 100% Paleo and require only 5 ingredients. They’re easy to make, which means you can enlist your kids as sous chefs. Feel free to get creative – the recipe calls for almond butter, but you can try other nut butters. Try other squashes as well! I have always made mine with canned pumpkin… if you’ve got extra cans laying around from Thanksgiving or Christmas, this is a perfect way to get rid of them.

Paleo Pumpkin Brownies

Ingredients:

1 cup almond butter

3/4 cup mashed pumpkin or other squash (canned or steamed)

1 egg

1/3 cup honey

1 tsp baking soda

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a bowl and mix well.
  3. Pour into a greased 8 x 8 pan.
  4. Bake at 350 degrees for 25 minutes or until a toothpick inserted comes out clean
